Labor is your second-biggest controllable cost, and how much you can carry depends on how much of your business runs through a kitchen. These are the ranges operators aim for. They are targets, not laws, and every kitchen carries them a little differently.

Add all your labor
Add every dollar it costs to staff the place for the period. Hourly wages, salaried managers, payroll taxes, and benefits. The whole load, not just the time clock. This is the step where the number most operators quote falls apart.
The salaried people count
Leave the salaried managers out and labor looks lean because the biggest steady checks are missing. Put them back and it jumps. That is how an operator swears labor is at 18 percent when the fully-loaded number is 26.
Divide by sales
Divide total labor by total sales and multiply by 100. A beverage-led bar runs 18 to 25 percent, a bar with a kitchen 25 to 30, a full-service restaurant 30 to 35. Run it against your sales the same way every week and watch which way it moves.
