How Shift Works

Shift Control is the floor manager's home base, the running record of a single service from line-up to the drawer count. Everything that happens on the floor gets logged here as it happens, and it feeds your cash, your loss picture, and your Profit and Cash Recovery. Here is how a shift moves through it.

1. Line up before doors

Start with the Pre-Shift Briefing: the line-up sheet you read to the floor, with the day's cover forecast, check-average target, and the items you want pushed. See Run a Pre-Shift Briefing.

2. Run the opening checklist

Work the manager opening routine so nothing gets missed before the first guest. See Run Shift Checklists.

3. Log what happens during service

As the shift runs, log the exceptions while they are fresh, so each lands on the right shift and server instead of evaporating into the weekly total:

4. Count the drawer at close

Handle every cash move in one place: drops to the safe, deposits, bank issues, and the reconcile that catches an over or short on each register. See Count the Drawer.

5. Run the closing checklist

Finish the night with the manager closing routine, checked off and saved as your record that it got done. See Run Shift Checklists.

Why it all connects: the exceptions you log here feed Loss Prevention and the Bar Cop Audit, cash variances roll into Cash Recovery, and comps and waste come out of your Inventory Variance so a give-away never reads as theft. The floor record you keep tonight is what makes those numbers real.
